Palak Paneer without cream

Most of us realize the need to serve nutritious healthy food to our kids and ourselfs. In my opinion, this dish is right there. My kids love Paneer; Spinach is a no no. Paneer in Spinach? well thats a different symbiotic story:). They tolerate Spinach for Paneer. This way I make sure to give them leafy vegetables once in a while.

Palak-Paneer is a thick gravy dish which goes well with Chapathi, Naan, Parota, white Rice...

Preparation time:30 min
Cooking time: 20 mins

Ingredients:
Fresh Palak/Spinach - 250gms
Paneer - 250 gms (Farmer's/Curd cheese)

Oil - 2 tbsp
Onion - 2 medium size
Green chillies - 2 nos.
Jeera/cumin seeds - 1tsp
Chilly powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tsp
Garam Masala powder - 1 tsp
Salt to taste

Method:
  1. Wash the spinach well, to get rid of any mud particles.
  2. Place a pan on medium flame and drop in the spinach. Boil it without using any water. As you boil, the leaves release water which is sufficient for cooking.
  3. Switch off the stove and allow the spinach to cool down.
  4. Grind the spinach leaves to a fine paste leaving the water behind. You can add this water if needed while cooking.
  5. Chop the onions, green chilies and garlic finely.
  6. Heat a pan, add in the cumin seeds, onion and green chilies.
  7. Saute till onions turn translucent.
  8. Add chilly powder, turmeric powder, coriander powder and garam masala powder and saute it for a minute.
  9. Add the spinach paste and saute for a minute. 
  10. You can add the boiled spinach water if required. 
  11. Cut Paneer into  3/4 inch cubes.
  12. Drop in the Paneer and boil it for 5mins. Alternately, you can also fry the Paneer in a little ghee to give it a distinct flavor and then add it to the gravy.
  13. Garnish with a teaspoon of ghee  and serve it hot.
