Delicious Homemade Xmas Cake

Another year has passed and it's time to celebrate Christmas and make some fresh mouth watering special cakes.

I never made cakes before I got married and always bought cake from stores. Store bought cakes taste good (some are really good!) but they still miss that taste of home baked ones. I got this recipe from my mom in law. She has been making this cake since 30 yrs every Christmas. A few ingredients have been added recently for an awesome enhanced flavor.

Preparation time : 45 mins
Cooking time : 45 mins for each cake
Makes approx. 5 Kg of cake. We made 10 cakes of 1/2 Kilograms each

Butter unsalted - 750 gm
Caster Sugar - 1 1/2 Kg
Eggs - 24 nos
Maida / All Purpose Flour - 1 Kg
Baking Powder - 2 tbsp
Cake ginger (Click here) - 100 gm
Orange Peel((Click here)) - 100 gm
Brandy - 180 ml
Cherries - 250 gm
Tutti Frutti - 250 gm
Burnt sugar syrup (Click here) - 1 cup
Vanilla Essence - 50 ml
Cocoa Powder - 25 gm
Cinnamon, nutmeg powder - 25 gm
Salt - 1/2 tsp

  1. Soak cherries and tutti frutti in brandy overnight.
  2. Add butter into a large mixing bowl.
  3. Beat butter till it is fluffy.
  4. Now add castor sugar 2-3 tbsp at a time and mix well. This makes sure its easy to mix.
  5. After all the sugar is added and mixed, its time to add eggs.
  6. Beat 24 eggs well till it is frothy in 3 batches of 8 eggs each preferably in a mixer or blender and mix well.
  7. Now add baking powder and maida 2-3 tbsp at a time and mix well.
  8. Grind cake ginger and orange peel in a mixer very coarsely and add it.
  9. Add soaked cherries, tutti frutti with brandy and mix well.
  10. Add burnt sugar syrup and mix well. Burnt sugar syrup gives a slight bitter taste and enhances flavor.
  11. Add vanilla essence and mix well.
  12. Now add cocoa powder, cinnamon and nutmeg powder and mix well.
  13. Finally add salt and mix well.
  14. Now cover the cake mixture and let it rest for an hour.
  15. Preheat oven to 180 C.
  16. Grease a baking tin or you can also use a baking parchment in the tin and add the cake mixture up to about half the cake tin.
  17. Bake cake mixture for 35 - 45 mins.
  18. You can insert a skewer to check if cake is done. If the skewer is clean when you remove it means cake is done. If skewer is slightly sticky with cake dough means you need to bake it for some more time.
  19. Once you cake is done let it cool completely before you take it out of cake tin.
