Appam | Sweet rice pancakes

Appam's are one of the delicious sweet Indian breads.  Appam's are made with rice and the batter is fermented using yeast. Traditionally, the rice batter was fermented using palm toddy. If batter ferments well, Appam's become very fluffy and super soft.

I usually make Appam's for breakfast with egg stew. You can also make vegetable stew as an accompaniment. Most kids love Appam's due to its light sweet taste. My kids love to eat Appam's with honey. When I was a kid my grandma would give me Appam's with coconut milk.

Appam's are very tasty when they are made in iron Appam Chetty. You can also get nonstick Appam Chetty in shops/ online(Click here). Appam chetty is a bowl shaped pan used specially to make Appam's. 


Dosa / Idli Rice - 2 cups
Thick Coconut Milk - 2 cups
Active Dry Yeast - 1 tsp
Warm water - 1/4 cup
Sugar - 4 tbsp (adjust according to your taste)
Salt to taste

  1. Grind dosa rice with coconut milk to a thick consistency in a mixer.
  2. Soak yeast in warm water with 2 tsp of sugar for 5 mins and add it the rice batter.
  3. Add remaining sugar and salt and mix well.
  4. Allow batter to ferment for 5-6 hrs.
  5. Heat Appam wok/ Appam Chetty and grease it with oil.
  6. Now add 2 -3 tbsp of batter and turn the wok around , so that batter spreads on sides of the wok to get a crispy side layer.
  7. Cover and cook till bottom of appam turns golden brown.
  8. Serve it hot with any of your favorite Stew's
